Now that I've told you a little bit about me and what we do here at The Dinner Lab, so I want to talk about these cookbooks!
When I came up with the idea to do a recipe collection of only Instant Pot recipes, I knew they had to be GOOD!
I had tried far too many so-so recipes that I had found through Pinterest or Google search and knew that I was just going to have to teach myself how to use the Instant Pot and use it well!
I spent about 6 months developing and testing the recipes found in these cookbooks. In that time, I found friends, and neighbors and even strangers that are now friends, to join my recipe tester group. They each volunteered their time and resources to help me make and test every single recipe found in these books. And, I can't be more grateful to them for their help!
I learned a lot in those 6 months about how the Instant Pot works and how to best cook certain ingredients. Chicken breast is a great example! Have you ever had your chicken breast turn out dry and stringy in the Instant Pot? Me too! But, I found a method of cooking (weight + time + natural pressure release) that results in super juicy and tender chicken. I go into this method in detail in the cookbooks and all of my recipes using chicken breast now follow this model.
